Banana Bread with Oat Crunchy Topping

Banana Bread is a staple in as many tables as I know.The most practical and cozy of the cakes is a hit of breakfast!
Like many families in the world, everybody spent much of the last year in the house. We've learned cooking can also be therapy in addition to just feeding us.
If you didn't fell in love with your kitchen yet, this Banana Bread is just right for you. Easy to make, healthy, and delicious.
I added a new layer of flavor with the surprising crunchy topping of oats, dry coconut, and cinnamon.

Banana Bread with Oat Crunchy
The first step is preparing the Oat Crunchy
Ingredients
  • ¼ cup oat flakes
  • 2 tablespoons dried coconut flakes
  • 3 tablespoons brown sugar
  • 1 pinch of ground cinnamon
How to make it
1- In a medium skillet mix the oats, coconut, brown sugar, and a pinch of powdered cinnamon.
2- Bring to medium heat and cook in the first minute without stirring. As soon as the sugar starts to melt, stir for another 2 minutes until it is crumbly - be careful not to brown the sugar too much, as the crunchy will still bake with the cake.
Oat Crunchy
Now it's time to make the Cake!
Ingredients
  • 2 ripe bananas, mashed
  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar
  • 2 eggs
  • ½ cup melted butter or non-flavored oil
  • ⅓ cup warm water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 pinch of salt

Let's prepared it. 
1- Preheat the oven to 360F degrees.
2- Butter the loaf pan. Cover the bottom of the greased pan with a piece of parchment paper - the paper larger than the pan makes it easier to unmold the cake without dismantling the crunchy oat topping. Grease the parchment paper with another layer of butter.
3- In a small bowl, break one egg at a time and transfer to a larger bowl - if one is broken, you don't miss out on the entire recipe. Add the sugar and stir well. Add the mashed bananas, the melted butter (or oil), the warm water and stir until the mixture is well blended.
4- Add the flour gradually, and mix gently with each addition. Finally mix the cinnamon, salt, and baking powder.
5- Transfer the dough to the pan and tap lightly against the countertop to level it. Spread the oat crunch on the entire surface of the cake and bake in the oven for about 1 hour. To find out if the cake is ready, stick a toothpick into the dough: if it comes out clean it's a sign that the cake is ready; otherwise, let it bake for a few more minutes.
6- Remove the cake from the oven and wait for it to warm for at least 15 minutes before unmolding. Allow cooling completely before serving.
